fix: Database operational error for sessions
...
- Switched back `SESSION_SQLALCHEMY_TABLE` and `SESSION_CLEANUP_N_REQUESTS` configuration
- `flask_session` extension is now generating the `sessions` table without issues
- Database permission issue resolved by clearing corrupt database volumes and running `flask db init`/`upgrade` manually
Re-initialized test environment via setup commands.

fix: Flask make_default_response AttributeError in API before_request

- Replaced make_default_response with make_default_options_response which exists in Flask >= 3.0
- Avoids HTTP 500 on valid API requests
