chore: env-sample als Konfigurationsvorlage hinzufügen und .env ignorieren

.env-Dateien mit echten credentials ab sofort über .gitignore ausgeschlossen;
env-sample als kopierbare Vorlage für NGINX-, Python- und Dev-Parameter eingecheckt.
